Can you grow red wigglers and european nightcrawlers together? Is pure
coffee grounds with some eggshells an acceptable medium.

Red Wigglers and European Nightcrawlers do just fine together.
Pure coffee grounds with some eggshells is a recipe for disaster. Coffee grounds are both very acidic, and high nitrogen. This means they have the potential to get very hot. I always suggest treating coffee grounds like food, and just burying them in the corner. The worms can come to it to feed, or not.
The best beddings are high carbon and easy to break down.

Coir
Peat Moss (Can be very Acidic unless washed numerous times)
Old leaves (Can get messy when it breaks down)
You can also use carbon based materials such as straw that has been well soaked, but it takes the worms forever to break it down. Note, straw is not the same as hay. Straw is carbon, hay is essentially grass(Nitrogen).
