I have heard from various sources that worms eat coffee grounds (along with the filters).
However, I have also heard from another source that coffee will keep the worms awake with the caffeine, making them lose sleep, which results in tired, non-active worms. Is this true?

I’ve never seen anything scientific that discusses amped up worms. ;)

Coffee grounds/filters are just fine. They are acidic and high in nitrogen, so I suggest using sparingly and treat like food, putting the grounds buried in the corner. The worms can come to the grounds or not…their choice.
